Ingredients
For lavender simple syrup:

1/2 cup water

1/2 cup sugar

2 tablespoons culinary lavender buds
For the cocktail:

2 oz (60 ml) non-alcoholic distilled gin, Statera brand

1 oz (30 ml) lemon juice

1 oz (30 ml) lavender simple syrup

Ice cubes
-
4 oz (120 ml) sparkling water
-
Lemon slice and lavender sprig for garnish (optional)

¼ teaspoon butterfly pea powder diluted in a little water
Preparation of lavender simple syrup:

In a medium saucepan, combine water, sugar, and lavender. Bring the mixture to a simmer until the sugar is completely dissolved.

Cover, remove from heat, and let it steep for at least 20 minutes.

Strain out the lavender and pour the syrup into a clean glass jar.
Preparation:

In a Collins or highball glass, add gin, lemon juice, and lavender simple syrup. Mix to combine.

Add ice cubes and top with sparkling water.

Garnish with a lemon slice and lavender sprig if desired.

To give your mocktail a lovely lavender color, you can add a few drops of butterfly pea powder previously diluted in water.
