Tom Collins lavande

Lavender Tom Collins

Ingredients

For lavender simple syrup:

  • 1/2 cup water

  • 1/2 cup sugar

  • 2 tablespoons culinary lavender buds

For the cocktail:

  • 2 oz (60 ml) non-alcoholic distilled gin, Statera brand

  • 1 oz (30 ml) lemon juice

  • 1 oz (30 ml) lavender simple syrup

  • Ice cubes

  • 4 oz (120 ml) sparkling water

  • Lemon slice and lavender sprig for garnish (optional)

  • ¼ teaspoon butterfly pea powder diluted in a little water

Preparation of lavender simple syrup:

  1. In a medium saucepan, combine water, sugar, and lavender. Bring the mixture to a simmer until the sugar is completely dissolved.

  2. Cover, remove from heat, and let it steep for at least 20 minutes.

  3. Strain out the lavender and pour the syrup into a clean glass jar.

Preparation:

  1. In a Collins or highball glass, add gin, lemon juice, and lavender simple syrup. Mix to combine.

  2. Add ice cubes and top with sparkling water.

  3. Garnish with a lemon slice and lavender sprig if desired.

  4. To give your mocktail a lovely lavender color, you can add a few drops of butterfly pea powder previously diluted in water.
